Chicken with Peanut Sauce and Fried Rice

Asian food is amazing I love the stuff, I also love Asian culture, music and film. This post is about food, 2 very simple recipes that have lots of flavor and will impress whomever you’re cooking for. Chicken and Peanut Sauce and Fried Rice nothing could be more basic and necessary when showing off your Asian culinary skills, all you’ll need is the ingredients below and a wok (I bought my wok from Ikea for under $5). Check these out and try em, the pics are from my dinner tonight.

CHICKEN w/ PEANUT SAUCE

INGREDIENTS:

MAIN:

  • 1 lb of boneless skinless chicken
  • 1 white onion (chopped)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 2 teaspoons of soy sauce
  • 1 teaspoon sriracha sauce
  • 1 tablespoon of oil
  • 2 cloved garlic (minced) 

SAUCE:

  • 1 tablespoon soy sauce
  • 1 tablespoon of sriracha sauce
  • 3 tablespoons of peanut butter
  • 1 tablespoon if water (if needed)

Preparation

Preparation method

1. In wok or large fry pan, heat 1 tablespoon of oil over medium high heat. Add the chicken breasts. Brown breasts on both sides, so they are partially cooked. Remove chicken and place on cutting board.

2. In wok, heat 1 tablespoon oil over medium high heat; add onions and cook and stir for 1 minute. Add the chopped peppers, and cook and stir for another minute. Season with 2 teaspoons soy sauce and 1 teaspoon hot sauce, or to taste. Stir the minced garlic in with the vegetables. Continue cooking over medium-high heat.

3. While vegetables are cooking, cube chicken and set in bowl (Careful, it will be hot!)When vegetables are nearly done, add in chicken and cook through.

4. Add peanut butter, soy sauce and hot sauce; Stir well, making sure the peanut butter is evenly distributed. Depending on the peanut butter, add water to dilute for even coating.

5. Enjoy!

FRIED RICE

Fried Rice

INGREDIENTS:

  • 1 – 2 green onions, as desired
  • 2 large eggs
  • 1 teaspoon salt
  • Pepper to taste
  • 4 tablespoons oil for stir-frying, or as needed
  • 4 cups cold cooked rice
  • 1 – 2 tablespoons light soy sauce or oyster sauce, as desired

Preparation

1.

Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

2.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

3.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

4.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

5. Enjoy!
